Korean Beef Rice Bowls

Ingredients:

Beef:

  • 2lb wagyu ground beef
  • 6 tbsp low sodium soy sauce
  • 2 tbsp honey
  • 4-5 garlic cloves
  • 1.5 tbsp Gochujang (or more for a spicy kick!)
  • 2 tsp sesame oil
  • 1 tsp sesame seeds
  • 1 bunch green onions (sliced)

Pickled cucumbers:

  • 1 sliced cucumber
  • 1 cup grated carrots
  • 1.5 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1 tsp chili flakes or red pepper flakes
  • 1 tsp sesame seeds

Spicy mayo:

  • 4 tbsp mayo
  • 2 tbsp sriracha
  • 1/2 tsp garlic powder
  • Juice from 1/2 lemon

Prepared rice (or cauliflower rice) for serving.

Directions:

Cook the ground beef on the stove.

Drain.

Mix in the rest of the beef ingredients.

Prepare the pickled cucumbers in advance or while the beef cooks (just mix the ingredients together and store it in an airtight container in the fridge).

Do the same for the spicy mayo.

Serve the beef and pickled cucumbers over rice, and drizzle the spicy mayo on top.
